The leaves have been up to case and golden for 2 weeks yet the stems remain only discolored with a tint of green in them. They are still soft too. I am tempted to start fermentation process and remove the stems later.
No, heat them up and dry them. They will turn brown. Since you are not going to smoke the stems the main thing to avoid is mold or rot.I can easily dry them. the problem is that the stems are half green. So, im keeping the humidity up so they don't dry like that. I guess I can give them another week. Are you suggesting heating them up without drying them to speed up the "browning of stems" process. The leaf skins are beautiful, its just the stems that are half green.

You can dry them out in a kiln if you have one. You don’t have to dry them slowly just dry them. Drop the humidity or the stems are going to turn black and mushy with rot.
