25 plants in the small end of a 5gal bucket... Wow. No wonder perique by weight gets a premium price.

I tore it apart today to let it air and turn. I thought it would be a gooie mess. But to my suprise it was only sticky. Funkey texture.

I got some perique hanging also, I just might give it a try after shredding tonight. Do you think it has to be aged for cavendish.

Well I spiced it up a notch on this cavendish run. With Perique, I have no clue what I am doing but it smells good.
Brown Sugar, vanella extract and almond extract.
I got it all combined and simmering then added the leaf into the mixture the leaf was very dry so it would absorb the casing. Let soak in the brine for three beers, I drink fast. Approx 15 min.
Put it on the steam rack and we will see in the morning.

BT, That is going to be some fine smoke. Perique Cavendish with a hint of vanilla, Almond? What a blend to try? Sorry to get You side tracked, butt -Did You say Perique? Good job. Mad- Do You roll sticks with that in mind? Nice!

I forgot how many hrs. It has been, But on a slow simmer it only turned dark brown to this morning.
I turned off the turkey roaster this morning and let her rest. Got home tonight and wrapped one half of it into tinfoil for pressing.
Turned the roaster back on to see If I can get it darker for the next batch.
For people that want to do this I don't see why tinfoil two C clamps and two pieces won't work.

What happened? I put the perique cavendish in the oven for about 1 Hr. on warm with my chow.It is separating, after sitting a day. Did I Squeze all the juices out of her?

Well I took it out of the bucket last night for a breather it's been over a month.
I saved the sauce from the top, It's like molasses to put back in with some water.
It took some time to separate the leaf but it smelled Ok.
Not rotten, Not fruity, Not green, Not cow dung, I could not explain the smell but ok in my book.
It is doing something in there.
Its a Good Dirty Job rearranging the leaf.
Where is the new perique Guy to help us out?

With this fresh burst of oxygen to the leaf that goes back into the press, it will substantially darken and work its magic. Making Perique is messy, but fun and rewarding.

Your spot on Fun and Messy you forgot stinky.
A couple days early but WTF.
Freaking plug would not come out. Busted the bucket trying.
I put a screw in it and put vise grips on it pulling it out, screw you it said.
Screwdriver trying to pry it sideways busted the bucket.
I got pissed and slammed her upside down on the floor.
Sauce flew everywhere, I don't care about the floor that's what I got kids for to clean up.
Shot its load all over my pants, I hope it comes out.
It is darker then the first time I took it out.
I never found how long to let it air out. Anyone know?
I fixed the bucket with some epoxy and fiberglass I hope it holds.

Nice jeans. The color looks right. Wrap the plug in plastic wrap. Maybe place 4 large hook eyes near the upper perimeter.

My take on the length of airing is that it just needs to be well exposed to air (a minute or two), then it can go back in. Make sure the margins are sealed with water.
